Stock Up Your Pantry Like Samin Nosrat
Patricia ChangThe Salt, Fat, Acid, Heat author walks us through her kitchen staple products
Samin Nosrat — cookbook author, instructor, and star of Netflix’s documentary series Salt, Fat, Acid, Heat, inspired by her smash-hit cookbook of the same name — might have gotten her start at the legendary Chez Panisse. But anyone who’s watched her show or listened to her new Home Cooking podcast with co-host Hrishikesh Hirway, knows Nosrat is warm and inviting and exudes down-to-earth vibes.
Her pantry is no different: Nosrat’s many cabinets and drawers in her California home are bursting with plenty of familiar food products. (Her freezer, for what it’s worth, is apparently 99% chicken stock. “My main hoarding urge was to make chicken stock,” she said, describing her coronavirus experience.)
Nosrat offered up a tour of her pantry over Instagram Live, as part of the Eater @ Home virtual event series. “Right now, it’s this wonderful moment where we’re all getting a peek into each other’s homes,” she said. Here are a few of her favorite staples:
- Trader Joe’s Banana Chips (“These were the first things I bought, inexplicably, when I first grocery-shopped when everyone was panic-buying food.”)
- Ancient Organics Ghee
- Spices from Diaspora Co. and Oaktown Spice Shop
- Hime J-Basket Dried Buckwheat Soba Noodles currently sold out (“I’ve been eating a lot of non-pasta noodles lately, like soba.”)
- Blank Slate Kitchen Sichuan Chili Oil
- Bragg Premium Nutritional Yeast Seasoning (“For all the popcorn.”)
- Seka Hills Olive Oil (“This is my favorite everyday olive oil for... It’s not super expensive, and I get it in a big three-liter box.”)
- L’Escala Anchovies (“These are from Spain — I get them from Beaune Imports, based in Berkeley.”)
- Fly By Jing Sichuan Chili Crisp
In addition to cooking right now, Nosrat is giving back. Her suggestion for where to give right now: your local food bank or school districts, so that children who rely on school meals can eat right now, as well as No Kid Hungry.
